Make up a batch of these delicious Syn Free Broccoli Cheddar Hash Brown Muffins – fuss free, simple to make and only a few ingredients.

One thing I love is patties, bites or muffins where I can throw a few ingredients together and have some easy to grab snacks or meals.

It’s amazing what foods in my fridge or pantry can do to inspire a new recipe and that is exactly what happened here.

I had some fresh broccoli that really needed to be used up and well me being me, some plain ole broccoli just wouldn’t do and knowing I had a busy weekend ahead, I figured something that was easy to grab was a must.

These homemade Syn Free Crispy Golden Hash Browns are really popular in my house, so I figured why not combine the two together into a delicious Syn Free Broccoli Cheddar Hash Brown Muffins.

For the crispy golden hash browns, I parboil the potatoes before grating to get them nice and crispy, but there is no need to do that for these, as with combining the broccoli these are going to cook differently.

Now I know you are thinking, do I really need to grate all those potatoes and broccoli? and well yes you do, but I cheated and didn’t do it by hand. I used my awesome Nutri Ninja Blender and Food Processor with Auto IQ technology I love the food processor bowl with grating disc, as it takes all that hard work out of grating and is really great for recipes like this.

When you add the mix to the muffin tray, make sure you push the mixture down nice and tightly, it will help them form together so they come out perfect muffin shaped.

Wondering how to serve these Syn Free Broccoli Cheddar Hash Brown Muffins?. They would make a great side to a main course instead of these syn free chips or syn free mashed potatoes or serve them alongside some soup instead of using your HEb on bread. You could even make this the main part of your meal and just serve with some extra veggies and chips. A great meat  alternative if you fancy a meat free day or are vegetarian.

Alongside the Broccoli Cheddar Hash Brown Muffins, these are all great things to make up and keep in your fridge for when hunger strikes, as it is better to be prepared so you have something healthy and filling to grab, to deter you off grabbing something that you shouldn’t.

 make at least one thing like this every week. Most are great for taking on picnics or packing in lunches too.

I think these Broccoli Cheddar Hash Brown Muffins would be perfect topped with some perfectly poached eggs or make some of these Pork Sausage Breakfast Patties and make a yummy stack by topping one of the muffins with a sausage patties and then on the very top a poached egg. Delicious!!

I now know what I am making with the leftover Broccoli Cheddar Hash Brown Muffins in my fridge. I can’t wait.

Syn Free Broccoli Cheddar Hash Brown Muffins Recipe

Yield 4 servings

Ingredients : 
  •     400g of potato, grated
  •     300g of broccoli, grated
  •     1 egg
  •     1/2 tsp of salt
  •     pinch of black pepper
  •     120g (4oz) cheddar, grated - 4 HEa's
  •     Spray oil

Instructions

  1. Preheat oven to 200c/400f (gas mark 6)
  2. Squeeze excess liquid from the grated potato.
  3. Add to a bowl with the egg, salt, pepper and grated broccoli.
  4. Mix well to combine
  5. Stir in the grated cheddar till well combined.
  6. Add equal amounts to the 12 holes of a muffin tray. 
  7. Push the mixture down tightly into each hole (it will help them form together)
  8. Spray over the top with a little spray oil
  9. Bake in the oven for 40 mins until lightly golden.
  10. Allow to cool down slightly before removing from the muffin tray.
